🌿 Ingredients (Serves 4)

1 cup cauliflower florets

2 medium carrots, chopped

2 medium onions, finely chopped

3 medium tomatoes, pureed

1-inch piece ginger

4–5 garlic cloves

2 green chilies (optional)

2 tbsp Aarika Pav Bhaji Masala

1 tsp turmeric powder (Aarika Haldi)

1 tsp cumin seeds

1 tsp red chili powder (Aarika Lal Mirch)

2 tbsp olive oil or minimal butter

Fresh coriander leaves, chopped

Steam the veggies: Boil cauliflower, peas, carrots, potatoes/sweet potatoes, and capsicum until soft. Mash them coarsely and keep aside.

Prepare the masala base: Heat oil in a non-stick pan. Add cumin seeds, then sauté onions until golden. Add ginger-garlic-green chili paste.

Add spices: Mix in turmeric, chili powder, and Aarika Pav Bhaji Masala. Stir for 1 minute until aromatic.

Tomato magic: Add tomato puree and cook until oil separates.

Mix it all together: Add the mashed veggies, salt, and ½ cup water. Cook on low flame, stirring and mashing continuously, until everything blends into a thick bhaji.
