🥦🍅 Healthy Pav Bhaji Recipe – Street Food with a Nutritious Twist

Who doesn’t love pav bhaji? This Mumbai street-food classic is a favorite across India. But the traditional version can sometimes be heavy with butter and carbs. Don’t worry — here’s a healthy twist on pav bhaji that keeps all the flavor but is lighter, more nutritious, and just as delicious!

🌿 Ingredients (Serves 4)

  • 1 cup cauliflower florets

  • 1 cup boiled peas

  • 2 medium carrots, chopped

  • 2 medium potatoes (optional, or replace with sweet potatoes for a healthier version)

  • 1 cup chopped capsicum (green bell pepper)

  • 2 medium onions, finely chopped

  • 3 medium tomatoes, pureed

  • 1-inch piece ginger

  • 4–5 garlic cloves

  • 2 green chilies (optional)

  • 2 tbsp Aarika Pav Bhaji Masala

  • 1 tsp turmeric powder (Aarika Haldi)

  • 1 tsp cumin seeds

  • 1 tsp red chili powder (Aarika Lal Mirch)

  • 2 tbsp olive oil or minimal butter

  • Salt to taste

  • Fresh coriander leaves, chopped

  • Lemon wedges

🥘 Method

  1. Steam the veggies: Boil cauliflower, peas, carrots, potatoes/sweet potatoes, and capsicum until soft. Mash them coarsely and keep aside.

  2. Prepare the masala base: Heat oil in a non-stick pan. Add cumin seeds, then sauté onions until golden. Add ginger-garlic-green chili paste.

  3. Add spices: Mix in turmeric, chili powder, and Aarika Pav Bhaji Masala. Stir for 1 minute until aromatic.

  4. Tomato magic: Add tomato puree and cook until oil separates.

  5. Mix it all together: Add the mashed veggies, salt, and ½ cup water. Cook on low flame, stirring and mashing continuously, until everything blends into a thick bhaji.

  6. Finishing touch: Garnish with coriander leaves. Squeeze fresh lemon juice on top for extra zest.

🍞 Healthy Pav Option

  • Replace regular pav with whole wheat buns, multigrain bread, or even oats pav.

  • Toast lightly with olive oil instead of butter for a guilt-free bite.

💡 Health Benefits

  • Cauliflower & carrots add extra fiber and vitamins.

  • Sweet potato keeps it diabetic-friendly with lower glycemic index.

  • Olive oil makes it heart-healthy.

  • Still gives you that street-style taste, minus the excess butter!

Fun Fact: Pav Bhaji was originally created in Mumbai as a quick, nutritious meal for textile workers in the 1850s. Now it’s a worldwide favorite — and with Aarika Spices, you can make it both delicious and healthy!
